Caviar-known as the food of the gods-is still on many menus, but be careful of the price. It is one of the most expensive foods in the world selling for up to 35,000 dollars for every kilo.
Six tonnes of aquaculture caviar and nearly three tonnes of caviar fish meat were produced in Iran in 2020.
Out of the countrys 31 provinces, around 22 provinces have active sturgeon breeding units. Irans Fishery Organization says it wants to increase output of 100 tonnes of caviar by the year 2025.
This booming industry employs somewhere around 230,000 people nationwide. Based on the 6th five-year Development Plan (ending in 2021), Iran should have produced 1.5 million tonnes of aquaculture products. But the country was ahead of its schedule when its aquaculture production easily reached 1.2 million tonnes in 2020.
Last year Irans fishery exports were nearly 150,000 tonnes, worth around $540 million. The countrys aquaculture industry has grown 40 time since the victory of the Islamic Revolution of 1979.
